On the weekends I usually try to find a dish that is more laid back and not as much work. We hadn’t had waffles in forever and decided that Saturday would be our waffle weekend. Waffles are a fantastic treat and can be done in a variety of ways. These waffles are crispy, light, fluffy and oh so delicious.
- 1 1/2 cup of all purpose flour
- 2 tsp. Baking Powder
- 1/2 tsp. salt
- 2 eggs separated
- 1 cup milk
- 1/3 cup unsalted butter melted
Begin with placing your flour, baking powder and salt in a bowl. Mix together and then add your sugar and mix that in as well. In a separate bowl beat together your egg yolks, milk and butter. When adding the yolks, milk, and butter together make sure that the milk is warmed so that the butter does not solidify. Combine the two separate bowls and mix well. The batter should be smooth and thick. Next whisk your egg white until stiff and peaks form and fold them into the waffle mix. Lastly pour or scoop the mix into the waffle iron. With this recipe I used 1/2 cup of mix and it make 5 five inch waffles.
Waffles can be done in so many ways. Eat these with butter and maple syrup or if you want to get really creative do ice cream, chopped nuts and hot fudge. The versatility of the waffle is endless.
